Dates are really versatile, working in brownies, fruit canapés, pies… Now we’ll use them in softies’ dough. Softies are neither biscuits or energy balls; they are little chunks of happiness.
This time the sweetness of the dates blends really well with the ginger spiciness and the always welcome flavor of dark chocolate. The crunchiness comes through the quinoa crisps, an ingredient that makes a huge difference in the end texture of your softies.

200 of pitted dates, soaked in water for 15 min
60g candied ginger
1 tbsp. vanilla extract
1 ripe banana
85g vegan dark chocolate, finely chopped
1 cup quinoa crisps
Tip: You can use your food processor to chop the chocolate, no need to do it with a knife.
Drain the dates and process them together with the banana, the ginger and the vanilla. You are looking for a uniform paste the color of caramel and gingery aroma.
Pour the paste in a bowl and add the chocolate. Mix with a spoon while adding the crisps. Blend everything well and leave it in the fridge for 1 hour.
Pre-heat the oven in medium heat before covering a medium sized tray with parchment paper.
With wet hands, make little balls out of the dough and place them in the tin.
Bake them for around 20 min, until they look slightly golden.
Let them cool before poking the balls, they get crunchy on the outside and soft inside. You are welcome!
