Extremely Easy Muesli Bar

Stop!! Stop buying right now this industrialized muesli bars. Make your own, people! It is so freaking easy you will start questioning if this recipe really works. Have some faith, will ya? It does work and makes enough bars for the whole week.

 

This bars will guarantee your satiety during those long days far from home. And if you make them crunchy enough you can break it in smaller pieces and have your own granola!

It is also super versatile since you can adapt and combine different kinds of dried fruits, grains, nuts and so one.  

 

For this recipe you will need a food processor, or a really good mixer or a trained arm.

 

 

Ingredients:

 

 

  • 2 cups of oats *

  • 1 cup of raisins **

  • 1 cup of chopped walnuts

  • ¼ cup of coconut milk (or any other vegetable milk you like)

  • 200g of soaked dates *** (pitted, people! Soak them in hot water for at least 30 minutes before you use them)

  • 3 tbsp of agave or maple syrup

  • 3 flax eggs****

 

Notes:

* If you are gluten intolerant look for the oats that CLEARLY communicates it is gluten free on its package. A lot of producers process the oats in the same machines of other grains that contains gluten, which results in cross contamination. Read the packaging!

** In the muesli bars in the pictures I used 5 medium dried figs processed together with the dates and almond milk.

*** Medjool dates don't need to be soaked. Just give them a rinse and check if they are still good. To do that you need to open them and smell it, if the scent is alcoholic then it means they are now in heaven and are already facing fermentation. Don't eat that.

**** 3 flex eggs = 3 tbsp of chia seeds or ground flax seeds + 9 tbsp of water whisked together and left aside for 10 min

 

To make this happen:

 

  1. Preheat your oven at 170 Celsius degrees; Take a baking tray and cover it with parchment paper or oil it with coconut oil.

  2. Drain the dates and throw them in the food processor, add the milk and agave and blend everything. If you don't have a super good blender or a food processor, well, then I recommend you turn on the TV, sit right in front of it and start smashing that dates until they reach the right consistency.

  3. Pour the date mix in a big bowl, add the oats, raisins, walnuts and blend everything well. Add the flex eggs, wash that hand and use it to help the flax gel blend really well in the dough.

  4. Pour the dough in the baking tray and use the back of a spoon to even the layer. Spread as much thin as possible if you like your bars crunchy, or leave it with a certain high if you like them more moist and chewy in the middle.

  5. Bake for around 25 min at 170 degrees, or until oats have a brownish color. After that increase the heat for astonishing 200 degrees and let it bake for 5 minutes more, but check it to avoid burning the bars.

  6. Withdraw the baking tray and get occupied for 30 min or until the bars have cooled down completely. Cut in squares and enjoy while dancing!

 

 

PS: Other flavor combinations: dried cranberries + coconut chips + walnuts / dried figs + coconut chips + walnuts / banana chips + raisins + cinnamon powder + cashew nuts / dried apples + raisins + brazilian nuts / ...


PS2: You also can add different types of grains to your muesli bars like: quinoa, quinoa puffs, amaranth, amaranth puffs, rice puffs, barley etc.
