Peanut Butter & Jelly Cookie in 4 Steps
Call the kids! This cookie offers the best opportunity to introduce little juvenile hands to the kitchen routine. With only 4 ingredients you’ll impress the guests, sweeten your coffee and grab the attention of the youngsters.
Crunchy on the outside and tender inside, this biscuit goes really well with or without a drop of jam in its middle. That said, it’s always fun hatting your pinky finger with dough while making the jam dimple.
1 cup peanut butter with no added salt or sugar
½ cup sugar
1 cup oat
3 tbsp. aquafaba*
½ tbsp. vanilla extract (optional)
* Aquafaba is the liquid drained from canned beans. People normally dispose that without knowing the wonders it can do. We have a full post about it, check it out!
To guarantee the success:
Mix all ingredients in a big bowl, except for the jam. Blend everything really well using a spoon or spatula. Now bring on the kids, it’s time to have fun!
Moist your hands and get small chunks of the dough, making the biscuits in your preferred size and shape. If you are going for the jammy middle, use the pinky finger to create a small dent for the jam. Use a tea spoon to place the jam in theholes.
Put the biscuits in a greased tray, or use baking paper. Space up the cookies, they want to grow up and conquer everything around them.
Bake at 170°C for 25 minutes. Wait until they are cold to poke the biscuits, they harden in room temperature.
