Don’t even start me with those nightmarish blend cookies. You can make your own biscuits, full of flavor, healthy and looking cool in the picture in the end.
Crunchy, gluten free and really fragrant, this cookie with wine will make your afternoon snack look super fancy!
1 cup buckwheat flour
½ cup natural brown sugar
1 tbsp. melt coconut oil
1 tbsp. cinnamon
100 ml red wine
2 tbsp. chia seeds
Hint: No need to use a special Chilean wine, you can use any red one.
Heat up your heart and your oven at middle heat. The heart can go warmer, no restrictions.
Mix the flour, the sugar and the cinnamon in a bowl. Separately, mix up the wine, oil and chia seeds and leave it aside for 5 minutes.
Mix in both bowls with a spoon. After everything is well merged, use your hands to work the dough for 5 to 10 minutes. It will still stick to your fingers, but everything should look uniform and consistent.
Lay a parchment paper sheet on a tin (or grease it with coconut oil), pick some small chunks of the dough with wet hands and get to shaping your cookies. I like to roll little balls and press them on the tin with the back of a fork, it makes the biscuits look from granny’s.
Bake them for 15 to 20 minutes and wait it to cool off before burning your tongue trying the first one.
Tip: If your Machiavellian plan was to make your co-workers drunk with the cookies, forget it; the alcohol evaporates in the oven. You’ll need a plan B.
