20-minute Dhal

 

With this dish there is no excuse to be lazy, it takes 20 minutes max to be ready! You take longer to pick a shampoo than cooking this Dhal, be honest!

 

 

Ah, and it’s a great match to whole-grain rice, couscous or barley. The only trick here is to plan this dish ahead, because you’ll need to leave the lentils soaking in water overnight.

 

 

Ingredients:

  • 2 cups red lentils (the orange ones, go figure)

  • 1 yellow bell pepper, cut in small pieces

  • 1 red bell pepper, cut in small pieces

  • 1 big onion, finely chopped

  • 3 garlic cloves, chopped (or a tbsp. powder garlic)

  • 1 tsp. powdered ginger

  • 1 tsp. curry powder

  • 1tsp. turmeric

  • Coconut chips

  • Parsley, chopped

  • Salt and pepper

  • Water or soy sauce to sauté

 

ProTip: ALWAYS leave the grains and legumes at least 6 hours soaked in water before you cook them, unless you use the canned ones, which are already cooked.

 

- Soak the beans, grains and legumes (like lentils) in a lot of water and add a spoon of apple cider vinegar or lemon juice. Drain the water after at least 6h and cook it with a new water.

 

How to prepare:

  1. Pour the soy sauce or the water until you cover the bottom of a medium pan and let it boil. Add the onion and lower the heat. When soft add the garlic, the dry spices and the peppers. Cover the pan with a lid and let the steam soften the peppers for 5 minutes.

  2. Drain the lentils and add them to the pan, cover with hot water just until covering them. Mix it well and increase the heat until boiling. Lower the heat and cover the pan once more.

  3. After approx. 10 min add salt and the coconut. Turn off the heat and add the parsley.

  4. That’s it, you can eat. See, super fast!

 

Variations:

 

There are like 8 types of lentils. Don’t be afraid to try all of them. You could also use white beans or chickpeas, really tasty as well!
