Bite-sized Lemon Sweets
Today I’ll show you that not all lemon desserts are sugary fat mousses or cheesecakes. There is much more to be offered by the citric king in this addictive sweet and sour world.
After this simple and wonderful recipe we’ll make you the newest lemon three zombie.
You’ll need our loyal friend, the food processor.
Lemon zest of 1 lemon
Juice from ½ lemon
4 tbsp. aquafaba
200g pitted dates, soaked in water
2 cups fine oats
Lemon essence (optional)
How to do:
Pre-heat the oven at 180 °C. Line a medium baking tray with parchment paper and leave it aside, you’ll need it soon.
Soak the dates for 15 minutes in warm water. Drain the water and blend them in the food processor until it’s a firm paste. Leave it in the fridge for 30 minutes, or until cold.
Mix all ingredients in a bowl except the oats. Make sure everything is uniform.
Lastly add in the oats, also mixing it well with a spoon until all is homogeneous.
With humid hands, take little chunks of the dough and make little balls, using the palm of your hands. If they start to stick wet your hands once more and start again.
Bake at 180 ° for 20 minutes. Wait for it to cool down before trying your dessert while dancing.
