That’s a pretty amazing recipe. There’s only ONE step in preparing it. Only one! But do not be fooled by its simplicity, there is a real richness in flavor, you’ll be thanking for every bite!
I bumped into this one during my stay in Roccarainola while WWOOFing, and oh boy, it was a sensation on the table!
500g dry couscous (best if whole grain)
1 medium cucumber, cubed in small pieces
2 medium carrots, finely graded
1 big onion, chopped
3 garlic cloves
1 medium zucchini
3 medium tomatoes
½ yellow bell pepper
7 lemons, squeezed
Some chopped peppermint
Ginger, freshly graded
Salt and pepper
The one step:
Put all ingredients together in a big bowl and mix them well. Cover it with a lid (or plate) and leave it in the fridge for 24h. Open it, eat some and hide the rest so you don’t have to share.
What kind of magic is that?
Couscous is a dish that cooks super quickly. It takes only 5 minutes in warm water for it to be ready. But in this recipe we cook it with lemon! Have some faith, it’s delicious!
