Vegandeiro

 

– Mom, what’s for dessert?

– There’s fruit in the fridge, sweetheart.

Although I LOVE fruits, sometimes what we really want is a little treat, am I right? So, I am here to tell you that you can make a healthy and sugar free sweet that will please even the pickiest of the infant palatars.

 

The “Vegandeiro” is the vegan sweet hero that will substitute the “Brigadeiro” (the most famous Brazilian sweet treat) with no disappointment! And it is unbelievably quick and easy to make. 

 

I have also included 4 additional versions at the end of the recipe so you can vary the flavours and never again count the days for the next child birthday party.

 

 

Ps: This sweet has been tested and approved by a 3 year old boy with a Chocolatier palatar.

 

You are gonna need a food processor, a really good blender or a strong and patient person that owes you a big favour.

 

Base ingredients:

  • 200g of dates soaked in hot water for 15 min or medjool dates

  • 2 tablespoons of cocoa powder for the mixture + cocoa powder to garnish

 

How come?:

  1. Drain the dates and blend them on the processor until they become a soft and mouldable dough. This will take about 4 minutes, tops.

  2. Add the cocoa powder and blend again until it is well incorporated into the dough. Leave it on the fridge for 1h before rolling the mixture into small balls.

  3. Wet your hands with cold water, and take small amounts of the dough, rolling them into truffle-sized spheres. Then, roll the balls on the cocoa powder to garnish and add more flavour.

  4. Enjoy this treat and let your soul be liberated from sugar craving feelings.

 

Variations for a world with sweet treats diversity:

 

  • For a less bitter flavour: add only 1 tbsp of cocoa powder to the mixture + 1 tbsp of agave syrup and garnish with cocoa powder; 

 

 

  • Crunchy “Vegandeiro”: add ½ cup of crushed walnuts to the dough and mix with a spoon + walnut bran or cocoa powder to garnish;

 

 

  • Coconut “Vegandeiro”: complete step 1 and skip adding the cocoa powder to the dough. Instead, add ½ cup of dry grated coconut to the mixture + dry thinly grated coconut to garnish;

 

 

 

  • Berry “Vegandeiro”: add ½ cup of dry cranberries to the mixture and give it a spin in the food processor together with the dates.
