So you got a bunch of fruits and your kids didn’t even look at it? Or you realized you eat a banana per week? Or you don’t know what to have for mid afternoon snack and the only thing that crosses your mind is that oily pastry at the coffee shop? Worst, you are dressing out of your pijamas at 10 pm to go get a chocolate to nibble as you watch that TV series so bad you don’t tell anyone you follow?
Do not fret! Sharpen your favorite knife, grab those forgotten bananas and let’s work the most precious fruit salad you’ve ever eaten.
Fruits that you have at home. The more varied the better.
1 lemon or lime
½ cup chia seeds
½ cup walnuts
Cut the fruits in small bits and add them to a big bowl. Try to vary them, it makes the salad prettier and tastier.
Chop the peppermint and the walnuts and add them as well. Squeeze the lemon over the salad and mix it all gently with a big spoon.
Add the chia seeds and mix it again. Eat it with a smile and be proud of those chia seeds stuck between your teeth.
Cooling is always welcome, but be aware that the lemon keeps the fruits fresh for longer naturally. Make sure to use it in this recipe, not only it’ll preserve the salad for longer, it also adds a refreshing taste together with the peppermint.
